Griffin was drafted by the Chicago Cubs in the first round (9th pick) of the 1988 Major League Baseball Draft. He started with the Peoria Chiefs of A-ball in 1989, but later that year was promoted to the Charlotte Knights of Double-A Southern League. From 1990-91 he played with the Knights and the Winston-Salem Spirits. After the 1991 season, the Cubs traded him to the Cincinnati Reds, where he played for their Chattanooga Lookouts.
