With the 4x100 free relays he was fourth and eighth in 2000 and 2004, and with the 4x200 free relays he placed sixth, sixth and 12th, respectively. Individually, he failed to qualify for the finals of the 200 metres freestyle in 2000 and 2004.

Herbst was more successful with the 4x100 relay in 2001 and the 4x200 relay in 2003 at the World Championships, winning bronze medals, and a relay silver and bronze at the 2000 World Short-Course Championships. At Europeans he won three gold medals, nine silvers, and five bronzes.

Herbst won German nationals over 200 metres from 2000-03. He was the son of Eva Wittke and Jochen Herbst and the brother of Sabine Herbst-Klenz. Herbst turned to coaching after his active career. In 2017, he was named Regional Chief Coach in Schleswig-Holstein.
